It's not about meat, it is about the virus. Handling it is not more and not less dangerous than handling Ebola or some biological weapons in an isolated Cat-5 biological security laboratory. If the virus is still there (which is absolutely possible, since these nasty suckers are really good at "surviving") it makes much sense to put it under the magnifier to see what it is made of.
The great pandemic will come. the question is not if, but when. And due to modern transportation, it will be a real nasty mess if we are not prepared for it. so what they are doing in no way is a foolish act.
