Did the Type XXI really ride that high in the water? Or is the museum just in "dry dock" with the water still there?

It's the museum boat. Here is a line drawing and a photograph of one at sea. Both pictures show the real waterline.

IIRC the boat is not really floating. It's some sort of an underwater "dry dock" if it can still be called so.
I think the sub is that high in the water to show the upper pair of opened torpedo tubes so that one can have a look through them from inside.

I have to say that I didn't take those myself back when I was there. I've got them from a friend of mine who found them on his company's LAN, so I actually don't know who took them originally.
