there is actually a 15 deg "sweetspot" for aiming torps either side of the 90 deg AOB. Anything closer than 1000m is good in that sweetspot.

To add, try to fire your torp when the gyro angle is +/- 5 or 10 deg from 0 (or 180 if you are using the stern tubes). This is ideal, but a large gyro angle may introduce errors which may cause longer ranged shots to miss.
