So when, generally, should I surface, and when should I snorkel? Also, what are some of the aircraft hotspots? I ask this because I've only encountered one plane in all my careers.

Going at >256TC will mean you will probably meet no to very little aircarft.If you're \using a major-mod,in the upper left corner of the screen in the nav-map screen ,you will have some more maps.One of them hasa green-yelowish kind of edge.Pull it down,and you will se convoy routes,single merchant routes and aircarft coverage zones.Generally ,all the "hot-spots" are situated within those circles,near ports.So be carefull in that area .

An good tactic is too stay Submerged deep like 50 meters or something like that
and go Slow. and at night use the snorkel to recharge less chance to meet airplanes.
