Had fun playing this mission yesterday and have a few pointers to help anyone succeed. I'm playing my own modded GWX but I imagine Onealex is fairly similar.

First off don't surface or use the scope during daylight, or you'll be harassed by the blimp. Do all your attacking at night. So to begin with, set your course to the SSW and run parallel to the coast, and travel underwater at about 2-3 knots and pass the time of day. You should eventually make hydrophone contact with the convoy coming from behind and can then shadow them until dark. Don't be afraid to use your batteries. Once it's about 18:15 ship time it's safe to surface.

Secondly, it's important to know that at least two, possibly three of the four escorts are equipped with early radar. Additionally the default IXC boat the game gives you doesn't have a radar warning receiver fitted. This means it's quite impossible to make visual contact without them coming after you. In order to make an attack you'll have to either overhaul the convoy and lay in wait, which could be difficult given you won't know their exact course given the radar situation. Furthermore if you did make such an attack you're very likely to be sunk in the shallow waters in the immediate aftermath.

The second option is the one I went with by default after I initially got detected, and that is to sink all the escorts. It's a bit arcade and not something you'd typically do in a campaign, but I think it's the best or possibly only way to succeed. If you understand the typical behavior where they charge directly at you at full speed, or with a slight zig-zag, it's quite possible to send a magnetic eel or two straight down your 0 or 180 degree relative bearing and give them a bad day. I was able to take down the trawler with the deck gun.

After that the convoy is pretty much in your hands, and external re-loading if necessary should be fairly safe. If there's anything left afloat by morning submerge by day and continue the process.
