Why not, have you taken a look in your grafic card setup and the sticky posts above? there should be a section for multi-screen.

On laptops there is usually a hot key for it (FN+F4 on my laptop which changes from multi-screen to screen-only or LCD-Screen-Only).
Triple screen? As long as you can do the connections this should be possible and it's independent of games like SH3, SH5. But then, I don't know how these sub games will display and at which resolution.
Also explore the download section for SH5, with the tons of mods for sub games, you may pick-up one for your purpose.
