I have a German butcher I deal with and he makes EXCELLENT pork sausage. I prefer pork sausage and I don't care if the Jewish and or Muslim people don't.

Best sausage I ever had was boudin from Nunu's Market in Louisiana. I guess boudin technically counts as sausage, no?

If you are to the point where you are seeing a cardiologist you probably be forgoing any type of sausage for leaner types of meat, if you are bent on eating meat.

If you are at that point you've waited too long. Cardiologists see ALL sausage eaters as potential future customers.

You will like it.The best way is the way native Hawaiians (the native Polynesians not the white boys) cook a hog.I watched some Hawaiians in the Air Force once have a pig roast
they actually had family members back home send them banana leaves and got some lava rocks from some Germans.They dug out the spit and lined the pig with the banana leaves and the lava rocks and let it cook all day.It was very good and an enjoyable time as well I was one of the few non-Polynesians present they do not invite just anyone to eat with them.
