There are visual readouts from the engineer yes,and I reckon anyone not being able to display these for any reason could always look at the gauges on the actual components themselves below deck.
As far as fuel is concerned I think getting a report from the navigator on how much fuel is available at the current speed should suffice,and just keep monitoring it from there.Thats what I do anyway  I like the idea of slideout dials and gauges,but I don't have GWX...yet.Another time

Fired up my test game.
One way to get the fuel level. Officer to the far left then hit report. The brown indicator is how much fuel is left. He will also notify you when 75,50 and 25 % is left.  Another way to see the meter is inside the command room. (me gets hungry)

Thanks! I see it now. I was confused because the manual uses a gerry can symbol for fuel and I was looking for that.
