Default Just can't seem to grasp it

Hey everyone! I come here again looking for advice!

In the last year I must have installed Wolves of Steel about 3 times (I haven't played the game unmodded yet), and every time, I really really want to get in to this game. I play lots of complicated games, but somehow I keep failing at grasping this game. Therefore...I hope that people can guide me in the right direction.

I've played the four bearings tutorial like 5 times. And after extensive reading I think I know very well how exactly torpedo's work. AoB, gyro angle etc., no problem. Then i start the campaign and skip the tutorial. I accept a mission and go to the area where I have to be...here the problems start.

Sometimes, I do suddenly get a bearing on someone! Hurray! I immediately start plotting it, but either my hydrophone man loses the target...OR he suddenly starts reporting on someone else, meaning all my plotting was for nothing.

What's your normal approach when starting a mission? How do you make contact (periscope? Hydrophone?), how do you keep following the same target? The four bearings method made it seem so easy, but it seems like traffic on sea is quite busy ^^
