I saw a post on this a few weeks ago, no matter what you do the Bismark will sink, even if you "save" it, you'll get a radio message later saying it was sunk.
My theory on this, as just having witnessed all this recently in my own career, is that even if you "save" the Bismark, I noticed that all it did was go around in a big circle. Perhaps this simulates the real life rudder damage it took before entering into that final battle. So matter what you do to save it, there's nothing you can do about its destroyed rudder, so it can't ever go anywhere and eventually runs out of fuel and sinks, or it can't direct itself the right way into any inclement weather and the seas sink her. Just a theory!
