Noob questions

Thank you for being patient with me and my questions. I've got a few more:

When I see a target on the map and am working to calculate the intercept angle - if I don't have a radar/sonar aid that gives me the relative bearing - how can I calculate it manually? (Feel dumb asking)?
I have entered a name for myself in the "Career" section and have been saving each leg of my initial mission. I play unitl I get tired then save and come back and load the mission. If/when I successfully complete this mission will the game save my name/career? Currently, each time I return it only says "John Doe".
