There is no single answer for this, that is what makes the game so good.

Each attack depends on the overall situation. Weather, number and position of escorts, day or night, range, time of the war, value of the target(do I want to spend a extra torpedo or two to guarantee a hit) and in a not too realistic sense what mods you run. THAT is why you are the Captain.

You can do things in stock that are instant death in late war TMO 1.9

If I feel comfortable leaving my scope up for extended periods of time
I'll do much as Thor does. Constant helming ships settle down quickly to about 5 or 6Kn. and a little plotting will give you an average course pretty quickly. I shoot just before the apex of a turn, if a high value target will send an extra fish just to be sure.

If I'm not comfortable with the situation I do a runaround and set up better conditions.
I've tracked a good convoy for two or three days just to get to the point that the escorts are guarding a bunch of open water.
Great fun for me at least.
