Torpedo Options?

Maybe this sounds like a stupid question, but where do you find the torpedo options (depth, speed, etc) for the German subs? I've already noticed that if I'm locked on a target, it automatically sets the depth, but not the speed (I think).

How do you get to these options? It's cost me quite a few juicy T3s.
