First download some new songs, or music-type sound-mods, etc. Then it's a good idea to zip-up (save/hide) your original gramaphone sounds, as not to interfere with new ones.
All gramaphone sounds go into: Sh3\data\sound\gramaphone folder. Sound formats can be .wav(?) .mp3 and .ogg files. The .ogg format works best as it does not 'skip' under time-compression. A freeware program call DBPowerAMP will convert most music files to .ogg format. It's a very nice program.
