the relative big size of the sub compared with the crew could be a engine limitation, to show well the movements of the crew walking along the sub in the compartments and limit the clipping.

Perhaps a historic size can cause a bottle neck for the crew when moving inside the boat and is better for the "movie" atmosphere

I agree with the above. Sticking to 100% accurate scale might result in an unplayable game.

No!! The one at the Silent Hunter 5 site where it has "Enter or Forum", the one displayed on that screen is the old one showing the cook,

Strange then, I took a snapshot of the screen and you can see the address bar as well as the date in the lower right corner, seems that possibly some countries display differently maybe!!

Try a clean with ccleaner and then see how it goes .
