Influenced no doubt by a lifetime of war movies (laterally recalling 'Where Eagles Dare'), I very much like and prefer the 'Germanic' sounding music in SH3 for U-boats . I like SH4's music too. but for my taste, its resolutely buoyant derring-do action-adventure themes which work so wonderfully well for the US boats in the Pacific theatre, lack the darker Wagnerian 'Götterdämmerung' type undertones more appropriate for Germany's 'blood and Iron' struggle in the cold Atlantic depths. New to modding, I'd like to know if it would be possible to replace SH5's music with SH3's, and if so, how precisely one might go about it?

Yes, it not only possible, it is fairly easy. Both use the same type of file for the music (.ogg), so all you have to do is copy the files from the SH3/Data/Sound/Music folder into the same folder in SH5. You also have to rename the new files so they read exactly the same as the ones in SH5. It's easiest to copy the SH3 files to a new folder, rename them and then move them into SH5. There are some new file names in SH5 that weren't in SH3. You can either leave those or make another copy of the SH3 versions and rename them to replace the SH5 ones.
I personally don't like feeling like I'm in a movie, and threw out all the music files.
