Say you have 2 or 3 ships at rest... how do you target, fire, re-target, fire... etc? Are the torpedo's fire and forget?

Yes. Aim, shoot, and line up another target.

If you are spotted during the torpedo run, the target will probably start zig- zagging, and the torpedo will miss. So, the answer is "No". |

Yeah, you can work out the multiple solutions and fire in order such that ye fire the one that takes the longest to target then fire the next after "x" amount of seconds have passed so that the impacts occur at roughly the same time. Of course you then need to figure the solution for where the second target will be when the first one is impacted to get the acurate time to subtract.
Longest run to target - next longest run to other target = "x" I don't try to get that exact very often.....got enough of a workload just getting the solutions lol |
