My SHIII has all the bells and whistles to it. Yet I get bored with it easily now.
My CAoD is '95 graphics and outstanding game play. Just knowing sunrise and sunset was important to a commander when stalking a convoy. Let alone, the thing most people know was the "wolfpacks", how could a sub sim not have that as part of the basic game. Do I miss two week storms and no way to attack-heck no. ![]()

I like some of the things in SH3 too but the heart of it (for me) is that the escort/aircraft AI is dumb as bricks in any SH3 version.
Having said that, I've done some slight editing of various files that improve it a bit. But there are a lot of basic u-boat 101 items either done wrong or completely missing in SH3. Various mods help with this but not as well as if they'd been in the game from the start. Many of the Sh3 mods are for things that come out of the box with AOD. With AOD, one can tell the makers liked the subject and did a LOT of research on it.

I liked the way AoD gives you the feeling of being hunted. Its illusion of course, but its well done and works within the context of the sim. It doesn't allow the illusion to slip by acting stupidly or caught cheating by the player -all marks of thorough playtesting by the developers.
