Why do you want to change it?
If you change the folder name it will not possible for the game to find your save games, settings an so on and it create automatically a new folder named "SH5".

I'm considering how to install a new mod and to remain using an old one, It means there will be two SH5.

Both at the same time doesn't work.
In the case to test or play a mod and you will have the option to go back to stock game, it is possible to rename the SH5 folder as backup. The same applies to the installation folder to have a backup from the game if you will not use the mod anymore. But do not rename the installation folder, just copy the folder to have a backup.
