I know there are many ways to setup firing solutions. My preferred route is to use the TDC, input all the data and let it come up with a firing solution.
One issue I keep encountering is that setting Gyro angles is not "sticky", so that, for example, if I set tubes 1-2-3-4 at -2, -1, 0 and +1, all tubes will be set at whatever Gyro angle I set for the last tube. This means that when I want to fire a spread, I have to manually set the angle on each tube before I fire. Am I doing something wrong? Is there a workaround or a mod for this? I think I had asked the same question 1-2 years ago, but can't find the thread. I seem to recall the consensus was that it was a bug.

No it's not something you're doing wrong. That's the way the real TDC worked so that's the way the game TDC works. Torpedoes were fired fifteen seconds apart or so and that gives you plenty of time to alter the setting. Unfortunately the only person on your sub is you and the real subs had crews. The captain didn't have to worry about such mundane things. He ordered the settings and the torpedomen got the job done.
