Why do ships need more than 1 torpedo to sink them ?, this does not seem realistic. Is it because I have the realistic ship sinking time box unticked ?

It depends on the ship. A ship carrying a load of iron ore might take one hit and sink in 30 seconds. Other ships have taken as many as eight torpedoes before they finally went down. Have a look here:
http://uboat.net/allies/merchants/listing.php You'll find that most smaller ships sank after only one torpedo, but a great many of the larger ones took at least two, sometimes more.
