Default problem: targeting keel can't break in half

Guys,
I'm running GWX2 and I'm trying to aim for the keel and it is not working.

I'm using steam torps and magnetic pistols.
what I do is lock on the target, get a good solution (aob and distance) and choose the keel. when this happens the ship never breaks in half. also when i have a ship locked I can not manually change depths. Am I doing it wrong?
I just spent 3 eels on an empire type freighter targeting fuel bunkers and engines and it would still not sink, I had to finish her off with the deck gun.
My brother who played sh3 a while ago enjoyed breaking ships in half all the time.

he says I'm doing it wrong as I have the target locked, but if I don't have it locked then won't the torp just fire straight at where I'm pointing at the moment?
