Default Torpedo Wake and duds

Hi, I've just completed my first combat patrol - and that was pretty tough, by the way. I was told to put myself just off the coast of Japan and had a terrible time dodging planes when going in. A new plane attacking every two minutes. Rather annoying actually. How do you guys deal with plane-infested waters?

Anyway, I have a few questions about the Mark 14 torpedo.
I've heard a lot about the many problems and malfunctions with this torpedo - but in my patrol I didn't have a single dud. All my torpedoes worked fine.
I'm running full realism, except for external camera and event camera.
I guess I'm lucky all my torpedoes worked, but I don't want this to be a bug as I want to experience the random malfunctions too - they add colour to the game, I think.

Another thing, there's no description of torpedoes or subs ingame but as far as I know the Mark 14 was a steam powered torpedo and as such would be expected to leave a white line when traveling towards the target. I never saw such a line.
Bug or true to life?

Lastly, the broken chronometer is really cramping my style. Is anybody working on a mod or something to correct this problem (not thinking about a possible patch 1.2 - that's probably weeks away anyway).
