Are you playing Stock SH3 or using a supermod?

Stock SH3 you can just click on the Ammo of your choice from within the Deck Gun view and it will start to load.

If, for example, you are using GWX, you only have 1 type of shell for the Deck Gun but you will need to manually load it, just like above.

Question about that. Why does the deck gun have just one type of ammo in GWX? Just wondering what the reason behind it is, not saying there is anything wrong with it

I believe that during research for GWX it was found that U-Boats only carried the High Explosive shells (HE), therefore that's all that they included.

Realism baby.

Whilst agreeing that the subs didn't carry starshells I sometimes become bewildered when you look at links like these two below which clearly make reference to them :hmm:

The only reliable source I know of is John Campbells Naval Weapons Of World War Two. When he is listing German weapons he doesn't really say they didn't have them; he says AP and SS on destroyers and minesweepers. Note he doesn't say ONLY on those vessels, so it is slightly vague.

It always leads me to ask the question: why would they have them?

As to why sources list them for u-boats, it is possible they have other information. It's also possible that they use a generic source which lists all ammo types for the gun in general without discriminating between individual ship types.
