Default I sink 'em the hard way.

I had the map on the wrong view yesterday, IE: Way too close. I was hunting one of the 4 stack destroyers. He ran smooth over me, causing some damage to my sail. He went down right after that. In fact, he went down faster than any ship I've ever torpedoed. Of course, I didn't get credit for the kill, but it still felt good taking him out.
Thankfully, no crewmen were injured and I was able to fix the damage at sea.

I just got to keep an eye on what level I have the map set on in the future.

My secret weapon is to wait until the destroyer is in his attack run, then i'll blow all ballast tanks and surface along side of him. I then throw Bernard aboard the destroyer, telling him "Bernard, there are thoze guyz that ztole your teddybear"! Then i'll just sit back and enjoy the show. No renown, though, but still funny....

Welcome to the best forum on the net. It sounds like you are running the vanilla version of the game...that means straight out of the box. Anyway that was a know issue in the vanilla version. Destroyers would sink after running over you. As you get around the forums I'm sure you will come upon the super mods that trick out the game in to some decent realism. When I mean tricked out I do not mean torpedoes that go 80 kts and explose like an ICBM. I mean mods that make it as real as it gets. Look for the Grey Wolves mod over in the mod forums or wait for the expansion coming out in mid December. I recommend you get the GW mod so you know what to expect for the expansion. What should you expect? Pure unadulterated FUN and well put together mod!
