how do I automatically lock on to the target and have the torpedo follow the ship instead of aiming a few feet in front of the sip and hoping it hits the ship?

Only a few torpedo's "follow" a ship. Mainly the Falke ones.
Otherwise, go to Realisim, just before a Patrol, and uncheck something similar to "Manual Targeting" or "No automatic targeting" Then find yourself a ship, press the L key, Q for a bit O' Realisim (Q opens the torpedo door) and hit the red button to fire. |

Yeah disable manual targeting and use the ''L'' key to lock on target. Wait until the green inverted triangle is green before you launch, not yellow or orange. And watch the angle of bearing, anything outside 45 to 135 deg is probably a fail.
