Is there any PC games at all that have the German S-boote (in the Channel) in their inventory.

The only one that I've ever seen is in Enigma: Rising Tide (Gold Edition).

There's a mod for SHIII that lets you command an S-boot, you can check around the SHIII mod forum for it.
