I saw in Data/roster some folders with the nation's names. Inside there are file with units name for some class of ship. But in the simulation where i see ship's name. Because in captain's log i see the class of ship sunk, but not name.

I'll take a stab at this.
I suspect you're looking for a program called SH3 Commander. Once you have exited the game this program will allow you to generate a file for your career in which it will also name the ships you have sunk. As far as i'm aware in SH3 alone any sunk ships won't named.

You can see the names when you start sh3 commander (down right is placed few blue words,click on them and click personal files,there should be the patrol history.)
