I started a campaign in 1942, driving a IXC. GWX. First mission is to the coast of USA. Having crossed the ocean, it now gets light about noon, and gets dark about midnight. It's February!

I was also curious to know if SH3 modelled sunrise/sunset vs longitude.

Im guessing when you are seeing 12:00 midnight on the clock the local time off the US east coast is something like 5 or 6pm. therefore when your sub's clock says midnight the sun would just start setting off the US east coast. but when your clock says 12:00 noon, you should start seeing sunrise on the US east coast.
