Default Stevens Pocket Watch and other questions

With the pocket watch (x):
1. Is there any way by looking at that watch to determine when the torpedo is going to hit...as there was in SH3? I can't see any correlation between those 3 small hands and when the torpedo is going to hit.
2. Is there any way to reset all those hands so you can select the next torpedo, as there was in SH3?

And, is there any way for the player to manually search around and listen to the sonar as there was in SH3? All I can find to do is run a single range-to-tgt sweep.

And, when in the briefing room, the Captain's Career Log only shows my first patrol. I can find no way to look at subsequent patrols. Has any one else?

Thanks.

Watch the smaller circle beneath the second hand will turn grey when its less than 60 seconds. Honestly I havent totally figured it out yet.

As best I can tell, this is how it works: There are three hands on the small dial. One is large and red, one is small and black, and one is a darker red but between the sizes of the other two. Even though that dial is numbered 10, 20, 30, etc it represents a clock face just like the big one. The dark red dial gives you the estimated impact time for the first torpedo launched. I can't find any way to switch between running torpedoes like you could do in SH3. The big red and small black hands count off seconds, running together until they get to 60 seconds remaining. When that happens the large red hand stops and the small black hand keeps running around. Sometimes I've seen a fourth hand, or else the medium hand moves, because it'll count off the minutes a torpedo has been running. I'm at work, so I have no screenshots I can post showing this.

The right-hand page of the log shows the details of the patrol, all your kills and so forth. Look at the left-hand page, and you'll see a list of all the patrols you've made, the 1st patrol is highlighted when you open the log. Click on any of the other patrols in the list, and the details of that patrol will appear on the right-hand page. That confused me for a while also
