Manual techniques for measuring target ship speed

This is not primarily a question about timing methods, although I use the Imperial measurement scale and will soon be investigating the best "rule of thumb" approach.

What I'd like to know is this: What is the way to mark a contact on the nav chart? If I observe a contact through binoculars or periscope, what is the best way to obtain precise coordinates and get them down onto the nav chart? And is there any way to record the time of the sighting, too? I guess I have the same question about other sensor output, i.e. how to mark sonar or radar contacts on the nav chart but it seems to me that mark one eyeballs are the sensors of choice in sub ops of this era.

The object here is to wean myself off of auto map update but I'm some way off and I have to master speed calculations by marking progressive contact locations on the nav chart and timing them. As always, many thanks.
