Default Torp loadout

I am wanting to take a mix of mk14 and mk10 out on patrol.....cant seem to alternate them in the racks and I cant seem to control which ones are loaded.

Is this doable ?

Yes it is. I just booted up the game to see. When out at sea turn off auto reloading. That will enable you to load whatever fish you want in what ever tube. As for the order they are in in the storage racks, it's a numerical order. Mk 10's followed by Mk 14's etc..

When you're in port you can drag and drop your torp loadout to whatever you want.

If out at sea, as stated turn autoload off and load them as you please. Why at sea, with autoload off you can unload tubes by dragging loaded torps to an empty tube if you have an empty rack. This is also helpful is you get a damaged tube, you can unload the torp and use it in a good tube if you have one.
