[TEC] Torpedo Question

Steam Version UBoat Missions.

I click on the standard Gas/Steam Torp gives 3 speeds and ranges.

I cannot figure out how to set the darn speed and range.

Figured out I can still change it on the torpedo map.

But not from the Periscope?
