From what I have read, outside of quality, food was seldom an issue on long patrols. For water, the boats had desalinators, which provided drinking water. I can't remember exactly the quantity. I think It was something like 70 percent of what was needed. So having fuel as the primary concern limiting patrol lenght is realistic enough.

When in the central Atlantic, I stop at the Cape Verde Islands for lobsters
