you can untick the ship healthbar in game options and it will go away.
To do this - hit esc when you are in the bunker and select options.
Note: you must continue from the bunker for the changes to stick. If you load a save game stright away - you will lose the changes
For sinking ships - yes - you can kill with one hit.
You should try TDWs FX mod. It enables better sinking (flood, fire and time)
