This old model was made with what is now called Autodesk Maya. The model here is actually a mix between nurbs surfaces for the larger oval shapes, and polygons for the details. Of course, today I would probably use only polygons, or start off with nurbs and convert it to polygons.
Maya is a bastard modeling program imo. Works nicely, but I would argue that it does not always offer user friendly modeling tools. For example, you can modify a polygon object by using the animation tools (deformations). You would have to know about this beforehand or learn it later on.
