I observed that if a twin or tripple turret fires, the game seems to still paint only a single shell in flight and splashing. Is this correct, and can this be corrected by modding?

When a turret started firing at a target, standard practice was to only use one shell per turret until gunnery control obtained a hit or straddle. Then, the officers would call for "rapid fire", and all barrels of the turret would be fired. That way, less ammunition was wasted when ships fired their initial, ranging shots at the enemy.
It is possible to change to either single or multiple barrel effects for firing, but it would take some time to edit the relevant files...

I understand about spotting fire. Soo as-is, if two capital ships were to come into range of each other, we will not actually see broadsides delivered. Gottcha. Thank you for providing that clarity.

Ships that are made by me have three seperate guns that fires three seperate shells.
