So, I love having the external camera to look at my boat, but I sometimes like the morale fiber to not hit the next unit buttons to see what's been picked up on the hydro, or what is making that smoke on the horizon... how can I turn off the two buttons up at the top?

I'm assuming you are speaking of my UIs mod because that is the only one with those camera buttons at the top of the screen. I didn't provide any means of disabling any of the buttons. You can totally disable the camera bar though using the options editor/viewer app found in \Applications.

So.... I make a disable the mod in jgsme, make the change to the .py (camera bar visibility -> false) and then re-add the mod?

Or can I just pop the modified script in to it's own mod folder and install that

Don't hand edit any of the .py files. You're just asking for trouble. Use the application I made to edit the options file. The application will ensure the file doesn't become corrupted.

If you want the change to be permanent then yes disable the mod first, make change, re-enable the mod. If you want the change to be semi-permanent then make the change with the mod enabled. If you want to then revert back to original just disable then re-enable the mod.

Okay, but that is the correct boolean? And just the python script alone in a mod folder should do it?

(just checking before I break anything, also at work and unable to test)

Go to Options in the main SH5 menu when it's finished loading. You can turn off the external camera from there. It's the safest way to do it.... no mod needed.
