Is there, if not can someone make one, a mod to add realism options?

If you're talking about the realism of the AI forces, then you should try one of the "supermods" available, namely RFB, TMO, or FOTRS. I believe these mods tweak the realism for the AI forces.

Mabey something like "Slower submarine detection" or "Slower enemy gun reload"
