Removing the deckgun will not increase your underwater speed.

Removing the deck gun at the appropriate time will give you the benefit of removing the temptation to use it in an environment that will be quite unkind to you if you do use it. (when even the merchants outgun you) ;)

From the 'realism' standpoint... it is not realistic for a submarine to have a shoot-out/gun duel with any armed surface ship...ever. The risk to the submarine was simply too great. Submarine deck guns were generally only used against unarmed or disabled/abandoned targets.

Irl Kaleuns that removed their deck guns would also use the space as extra storage space. Frequently is was used to store extra food or spare parts.

"HMCS Assiniboine, escorting Convoy SC 94, sighted U-210 on the surface in poor visibility. This series of photos was taken during a 25 min gun duel between the destroyer and the boat at close range. Fire from the U-boat's 2 cm. gun started a fire in Assiniboine's forecastle which spread aft almost to the bridge. The boat's entire bridge crew, including the C.O. Kapitänleutnant Lemcke, was killed by a direct hit from one of the destroyer's 4.7" guns to the conning tower. U-210 attempted to submerge but surfaced quickly and the crew abandoned ship. Assiniboine picked up 10 survivors and HMS Dianthus 28, six of which were later transferred to Assiniboine."

You can "unofficially" edit your boats NSS_Uboat**.cfg file [EngineProperties] to give a simulated boost if you remove the gun.
For example:
AheadSlow=0.25 to AheadSlow=0.30 or something along those lines.
Making such an edit could affect your noise at silent speed and where one might presume removing weight should save fuel, this might burn a very small percentage more infact.
