I sank a US tanker in 1940, not sure of the month, should've known it was neutral since it was sailing alone. It left a green wreck. Will I be demoted, lose renown? Will US declare war against us? :) Also, are there different reactions to sinking various neutral ships from different countries or is it always 'everyone against you'. I have GWX 2.1 installed.

You will lose renown and if the renown loss makes you drop below the promotion limit then yes you will be demoted too
Sinking a neutral ship makes you an enemy of that country for 24 hours
May also effect how other neutral countries react to you too

You lose renown for sinking neutral ships - basically, your renown award is negative instead of positive. Sinking a hospital ship (always neutral) is, IIRC, -10,000 renown.
The U.S. will not declare war on Germany in GWX; rather, Germany will declare war on the U.S. on December 10, 1941, as it did historically.
The reaction to sinking a neutral ship is always the same: all ships from that country treat your U-boat as "hostile" for 24 hours.

Thanks for the answers. Please, could someone post a link to the image of the war entry dates of the various nations, I've seen it somewhere but I can't find it from the huge GWX 2.1 manual or from here.
The country I'm interested is Netherlands, I see Netherlands ships in a convoy with UK ships but are they some allied friend dutchies or German minions.
edit. Nevermind, I found the image in question from the manual. And the friendly ship I managed to 'accidentally' sink was infact a Panamanian ship.

The "Neutral-Enemy-Friend" image is also in the game. Its a pull-down page you can look at while you play.

The F1 help contains a lot of info
Was there in stock only very limited ( what keyboard keys do what etc )
GWX ( and others ) have fleshed it out so contains other usefull info such as you were looking for
Resupply dates are another very useful addition when low on fuel\torps
