Electics leave no wake so the enemy doesnt evade till after the opening
hit. Electrics are 1 speed torpedos.
steam torps leave a wake and the enemy will often attempt to evade
prior to the first hit. Steamers come with three speeed/range settings
Regarding the Destroyer Question whats the Best way to evade one
after your Detected.

.....then go deep, go quiet. Try to keep as 'narrow' a profile as possible to the destroyer(s). Remember however that turning at 1/3 speed takes a LOT longer than at flank speed.
By deep I mean go to your crush depth (as indicated by the red needle) if necessary or at least past one thermal layer. If you have no hull damage then you can easily go to the needle and slightly beyond. If you have hull damage then it's a guessing game your crush/sink depth could be a LOT shallower.

Steam torpedo's used alcohol (ethanol) and compressed air and water in a combustion chamber to make steam to drive a turbine that drove the screws. The exhaust gases had to be released into the water, and the rising exhaust bubbles leave a highly visible tell-tale wake behind the torpedo.
Electric torpedo's used batteries and an electric motor to drive the screws. Since there was no large volume of exhaust gases to vent, they leave no easily visible wake (there is a slight wake from the cavitation bubbles of the screws, but it's far, far less visible then the exhaust gas wake of a steam torpedo).

Why sometimes torpedos take alot of time to reload?

While you are running silent, torpedos are not being reloaded.
