If you want German action then get Operation Monsun and a few others that work with OM.
If you want to be a yank then run Trigger Maru Overhaul with Run Silent Run Deep or Real Fleet Boats with RSRD. There are a great many mods depending on how you wish to play. There are even mods to run as a British submarine with ten forward tubes like during the war.
