Oh, I forgot Tornado by Digital Integration.
I spent hours flying this thing (not really realistic physics but still much more of a simulation than most stuff of that time.)

Oh god, good question... probably the original MS flight simulator, but there were flight games I played before that though. Spend a lot of time on Jane's Longbow too... and Pilot Wings, now there's a quality flight-sim.

First flight 'game' was ACE/ACE2 (IIRC this was Air Combat Emulator?) on the ZX48K, there was an approach 'simulator' in the Psion 'pack' that came with it, but it didn't get too much use - loading time was about twice the flying time, so it paled quickly.

Deliberate purchases included (small sample, there were other more forgettable ones too)...

Tomahawk
Gunship
F-16 Combat Pilot
Lightning Simulator - This one was very good - had a very tough mission with 2 Backfires raiding your area, and 2 Mig23 providing cover - I once managed to down all four, but only got one bomber before it reached it's target, and ran out of fuel before I could rtb (and IIRC there wasn't tanker support on the combat mission). It had time of day, analogue controls via the keyboard, angle of attack limit and stalls, strength limit and over-g particularly with ferry tanks, automatic trigger/FCS and gun-camera, and extensive (although samey/identical) navaids and runways throughout the entire world... You could in theory fly from a UK base to Saudi for example with in flight refuelling - although this was not very rewarding without any terrain detail - even better it was released at the staggeringly affordable £1.99 - this was almost 'pocket change' even then...
Elite (ok not a flight-sim, but a sort-of flying around game )

The next machine was an Atari ST, and the first title we got (apart from the naff-shooter stuff that came in the box), was Falcon ST. Most of the rest were more-or-less forgettable - had a go at F19, and got Gunship for the newer and more convenient platform as well, but it didn't really improve much on the Speccy version.

First title on a PC (386/387) was Falcon 3, with MiG29 and OFT.
Tornado and Hind were both very good in their day, and I still run the latter from time to time - Tornado is just too picky about memory and I haven't had it running since the demise of EISA and Dos6. The last time I ran it, the poor physics and low res graphics were noticeable, but still not much comes close to the rush of a well coordinated strike on a defended complex. And the mission planner is still unmatched.

Lots of newer stuff, but I'd have to actually take a look-see at what the highlights are - much of it blends into an OGL/DX slightly dull but nice lens-flare...

Oh boy... I got Tornado running under DosBox... Ok, it needs some more tweaking, and I'll need to hunt out my keycard, but it runs.

I probably won't get back 'into' it as there is no real 'flight' feeling compared to some of the other stuff I have, but I'll certainly do some low level night stuff just for old time's sake

There is a tantalising reference that I found to an ordnance editor - allowing changes to drag and weight - so if I can find it (linky no worky), then I can slow down the fully-bombed aircraft a bit... always bothered me that it was still M1+ capable with 8x1000lb plus ext tanks, countermeasures and Aim9L or Alarm.

F19-Stealth Fighter (though mine was called 'Project-Stealth Fighter')
Birds of Prey (excellent, loads of different planes to fly from jets to C130's)

Janes WW2 Fighters. Even though you could only fly the BF-109, FW-190, P-51, P-37, P-38 and I think the Spitfire, it rocked. Good range of missions and targets too.
