I like a calm, dark, moonless night.

I vote for calm moonless as well. Like to finish off with my deck gun to preserve torpedos.

Fog i hate, slightly misjudge intercept and you're too far away and never see them to get a shot.

is the difficulty in spotting you when you are opposite the sunrise/sunset modelled?

If it is, then "wow".

One thing that I've noticed makes an amzing difference to your observibility is your profile - I wasn't paying attention the other day and I approached a bit close to a merchant before I turned parallel to him to get ahead - I thought I was ok, I was still a ways off and it was very rough. the detection meter was all green - but as soon as I turned 90 deg to him it went red, I was spotted and he started weaving

Fortunately he was an unarmed merchant, so I just headed straight for him and let him have 2 tubes @ fast speed from 400m and he didn't have time to take evasive action [BOOOM.... headshot! ]

Any kind of weather
I don't care. If I see a target I go for it no matter what. That's why I die some times I think

A semi dark night, half moon, will do fine. Also a hazy day with 7 to 9m/s winds will do fine too.

Or how about this, which I was in for 2 days straight in GWX. No joke, it was Grid BE18 Oct 9th & 10th, 1940.

It's one way for the crew to shower and save the subs fresh water supply.

Depends attacking what... a couple merchants without escort or a Flower nice weather will do, heavily escorted convoy preferably night and some rough sea for a safer escape even if it makes the attack a bit tricky...

Is AI programmed to have a bad detection-rate when weather is bad?

Night in medium fog, it means you can be in the middle of the convoy and the escorts can't see you!

I like a little wind, medium waves no fog. I now always set my torpedoes to impact.
