Where do I find out the boat number etc?

There is nothing about what number of boat I am commanding? The only place, Ship journal, only shows U-*,* and the default cap name.

You have to change it in the TDW options.

TWoS will have placed a shortcut on your desktop of TDW's OFEV
You can make the changes here in the Ships Journal Tab
