I'm a little puzzled. Not sure why mine would be running at 1280 x 720. I have a 1920 x 1080 monitor and basically installed straight from scratch.

Maybe I try again from scratch after messing with some stuff. I am running my rig at 1920x1080, so I'm not sure what's going on.
Also, I did check my menu_1024_768.ini file and it has this on the indicated section, but I would think my resolution is what is messing with it anyway:
