It doesn't really matter that much from where on the boat the angle is taken, as long as you are consistent. It matters that it is the angle between the target course and the line of sight.

Only if you are extremely close will this angle be any bit different for different places along the longitudinal axis of the target. A target length of 150m at 1km distance is only 8 degrees wide. At longer distances the difference is proportionally smaller. When setting the AOB, as long as you point the scope/UZO to the same spot as where you measured it you should be ok. In the middle of the target is just easier.
