Why?
Remember those endless bad weather patrols? Raining and 15m/s winds for a month?
You'll never experience that in Thomsen's Water.
The weather is set to change more constantly, so the bad weather will end up in one or two days, instead of months.
The bad side of this is that sometimes the sunny day will also change quickly.
The weather changing very fast, two or three times a day, is very common in Curitiba, the city where I live.
I don't know what is like in the middle of the freaking atlantic,

I hear you. it's been almost impossible fto find the right balance in this game. GWX has got it pretty close.......
I've been out on the oceans for extened periods of time....months.......Out there it really has more to do with systems, water currents and temperatures.......You usually have blocks of weeks of decent weather, then if you run into a system it may last a few days until you travel out of it.
The northern sub-arctic regions can get quite nasty though for weeks at a time.........lots of overcast, heavy seas, torrential rain.....but fog??? nope........
Heavy fog for days on end is highly unrealistic..........Heavy fogs out in the middle of the ocean just doesn't make sense.........Rapid changes through a day is really where and is most likely to occur in coastal vicinities........
With your mod though I've had scenarios where at one hour the sky is cloudless and the sun is out and water is flat......then an hour later under time compression it's raining cats & dogs and you can't see beyond 700 meters.
Great looking water though, nice work on the aesthetics.....I'd smooth out the weather a bit......

Took stock at that!
Will fix for the next release!
