I think I might have sunk one or two medium cargoes with a single torp, but I've sunk dozens with two torps. The damage model sometimes makes them blow up, but a bow, and near-bow hit will bring them down just as easily. They are a two-torp ship in my book though, so I will pass them up for, say, a large cargo or merchant. Again, think of the length/width ratio. Medium cargo ships aren't that big, but they are very broad.
